Not low this or free that. No food groups omitted. But unnecessary fat is
eliminated—too many recipes call for ¼ cup of oil when a tablespoon
would do just fine. Healthy, essential oils are used when oil is called for,
and the recipes are all tested with super lean meats. Simple carbs are minimized
and eliminated when possible.
All recipes give portion information and include the nutritional analysis.
Fresh ingredients are included as often as practical because they taste better
and are healthier. But processed ingredients help get the food to the table
in a hurry and are also used.
Some meat-optional meals are included. And fish will be included about every
other week—for those anything-but-fish folks, an alternative is suggested,
often using the same recipe. (Editor’s note: I know about these folks;
my daughter-in-law and my mother are among them!)
Recipes are also included for new vegetable dishes. Your weekly menus and recipes
will not be just four entrees with canned green beans for a side dish. It takes
creativity to get in those 5 to11 fruits and vegetables a day!

to the supermarket and you’re set for the week.
If you enjoy reading and adapting recipes, you’ve probably already discovered
the millions of recipes on the Internet. But this can be good news and bad
news. A Google search for “mac or macaroni and cheese” finds 25,500
sites! “Chicken recipe or recipes” finds 3,290,000! Yep, over 3,000,000.
It can take hours to sift through recipes, adapt them for healthy eating and
size them for your family. All of this is done for you.

These menus are everyday homecooking. Nothing exotic—not a single recipe
will call for truffle oil and there’s not a recipe for squid in the bunch!
Variety makes mealtime more fun—yes, even for kids. Keep those family
favorites, but no longer do you have to rely on a limited rotation that is
more boring than comforting.
Healthy adaptations have been made to many old favorites, but any adaptation
must pass the taste test. Who cares if it’s healthy if it tastes awful?
In other words, all recipes are grandma tested.
